Beef and Snow Peas in Oyster Sauce

INGREDIENTS:

1 pound flank steak

Marinade:
1 egg white
3 tablespoons soy sauce, divided
1 tablespoon cornstarch

Other:
7 to 8 ounces fresh snow peas
1 cup vegetable or peanut oil for frying, or as needed
1 teaspoon minced ginger
1/2 teaspoon granulated sugar

PREPARATION:

Cut the flank steak across the grain into thin strips about 1 1/2 to 2-inches long. Add the egg white, 1 tablespoon soy sauce and cornstarch. Marinate the flank steak for 15 minutes.

Blanch the snow peas in boiling water until they turn bright green. Plunge briefly in cold water and drain thoroughly.

Add 1 cup oil to a preheated wok and heat to 300 degrees Fahrenheit. Add the beef and cook briefly until browned (2 to 3 minutes). Remove the beef and drain on paper towels.

Remove all but 1 tablespoon oil from the wok or clean out the wok if needed and heat 1 tablespoon oil on medium high heat. Add the ginger and stir-fry until aromatic. Add the snow peas. Stir-fry for 30 seconds. Add the remaining 2 tablespoons soy sauce and the sugar. Add the beef back into the pan. Mix everything together and serve hot.
